Cleanliness is not only a closing task or something done before an inspection. It is a standard that remains active from opening to closing, in every area and during every shift.

A clean restaurant protects guests from germs and helps prevent unsafe conditions. It also builds confidence. Guests notice clean tables, menus, glass, restrooms, uniforms, and work areas. What they see shapes what they believe about the food and the people preparing it.

Cleanliness also supports the operation. When you clean as you go, return each item to its place, and leave your station ready for the next person, work becomes safer, faster, and more organized. Small problems are corrected before they become large ones.

Food does not have to look, smell, or taste spoiled to be unsafe. Germs can be invisible. Chemicals, foreign objects, and allergens may also reach food without an obvious warning. That is why food safety cannot depend on guessing.

Safe food comes from controlling the conditions around it. Time and temperature must be monitored. Raw food must stay away from food that is ready to eat. Hands, tools, and surfaces must follow approved hygiene and sanitation procedures. Employees must also report illness honestly before it puts guests or coworkers at risk.

These controls protect against four basic types of hazards:

Biological: harmful germs.

Chemical: cleaners, sanitizers, or other substances where they do not belong.

Physical: objects such as glass, metal, plastic, or other foreign material.

Allergen: an ingredient reaching a guest who must avoid it.
